Quick and Easy Hiking Energy Bars Recipe
These bars are SO good! They are soft and chewy and not overly sweet (which I honestly prefer) and they are packed with protein + complex carbs + good fats so they are perfect to take for a hike.

You can also play with the seeds and nuts. Swap the peanut butter for almond butter or for sunflower butter. Add some hemp or chopped dried cranberries. Basically, feel free to customize them to what you are craving.

Ingredients:
- 1 cup peanut butter
- 1/2 cup honey or maple syrup
- 1/2 Tsp cinnamon
- 1/3 cup dried coconut
- 1/4 cup chia seeds
- 1/4 cup peanuts
- 1/4 cup pumpkin seeds
- 1/2 cup rolled oats
- 2 Tbsp chocolate chips
Directions:
In a bowl mix peanut butter with honey or maple syrup and cinnamon. Add dried coconut, chia seeds, peanuts, and pumpkin seeds, and mix until incorporated.

Mix in the oats and let the dough rest for 5 minutes.

Transfer to a pan lined with parchment paper, pressing firmly so everything sticks together.

Top with the chocolate chips and refrigerate for 30 minutes.

Remove from the pan and with the help of a knife, divide into 6 to 8 bars.

We have many times talking about making our own energy bars, but never did. These look great, and they gluten and dairy free, which I need and struggle to find premade. Thanks.
